A brilliant article Jessica. Not only did I learn something useful but it was also uplifting to read something positive for a change, regarding climate change. Even though I live in the UK, I can see a time where growing amaranth might be very important. Here the plant is better known as Love-Lies-Bleeding, grown for it's ornamental beauty alone. Good to know it is also edible and not just in an emergency :-)
